Greek Oumph! Lasagna

Ingredients:
280g Oumph! The Spiced Kebab
1 aubergine
1 white onion
1 red pepper
2 garlic cloves
50ml olive oil
1 tsp thyme
1 tsp coriander seeds
2 tsp oregano
1 tsp cumin
1 tbsp vegetable stock powder
50ml tomato purée
250ml vegan cream
8–10 lasagne sheets
200ml bechamel sauce
Grated meltable cheese
Salt and pepper
Olive tzatziki:
200ml green olives
200ml vegan crème fraiche
1 clove garlic
1 tsp lemon juice
Cooking Instructions:
Preheat the oven to 150°C
Fry Oumph! The Spiced Kebab in oil until it has a nice, browned surface. Remove the Oumph! The Spiced Kebab from the pan and put it aside for later.
Cut the aubergine and pepper into large cubes. Slice the onions and garlic. Fry in oil until the vegetables have taken on colour.
Then add the Oumph! The Spiced Kebab, spices, vegetable stock, tomato puree and vegan cream – bring it all to the boil. Season with salt and pepper.
Alternate layers of filling and lasagne sheets in a dish.
Cover the top layer with bechamel and grated meltable cheese.
Bake in the oven until you can cut through the sheets with a table knife.
Serve with a dollop of olive tzatziki.
Olive tzatziki:
Slice the olives. Grate or press the garlic. Mix with remaining ingredients.

For lunch today I made some buttery rice, with green beans and Oumph! sticky ribs. In my eyes You can’t go wrong with Oumph!, these “ribs” in particular are probably my favourite. They are also very tasty in sandwiches.
