Hoisin Oumph! Taco

Ingredients:

280g Oumph! The Chunk
200ml Hoisin sauce from your favourite brand
200ml vegan mayonnaise
4 tsp toasted sesame seed oil
2 tsp lime juice
Cucumber
Lettuce
Small tortillas
Oil for frying
Sesame seeds

Cooking Instructions:

Start by thawing Oumph! The Chunk. Then pull the pieces apart with your hands into long strips.
Heat the oil to 180 degrees. Fry a little Oumph! at a time in the hot oil, be careful as it may boil over if added all at once. Fry until the pieces are crumbling – this takes about a minute.
Pick up with a slotted spoon or tongs and try to shake off as much excess oil as possible. Place the hot Oumph! in a bowl and mix with the hoisin sauce.
Meanwhile, dice the onion and cucumber. Mix the mayonnaise with the sesame oil and lime.
Serve in a tortilla with some lettuce, onion and cucumber. Sprinkle it with sesame and as much mayo as you like!
