Ingredients:
2 baguettes
24 Oumph! Balls
40g pickled red cabbage
24 slices pickled cucumber
40g pickled carrots
8 tbsp sriracha mayo (see recipe below)
1 fresh chili
1 handful fresh coriander
100ml BBQ sauce, for example Bulgogi
4 tbsp rapeseed oil
Pickle juice
100ml of your choice (we suggest rice vinegar)
200g sugar
300ml water
Sriracha mayo
300g vegan mayo
Sriracha sauce, to taste
Cooking Instructions:
Pickled vegetables
Cut the vegetables into equal sized pieces. Mix the vinegar, water and sugar and pour the pickle juice over the vegetables until covered. The length of time normally depends on the vegetables, but 2–3 hours is usually enough. You can then store the leftovers in a jar with a tight-fitting lid in the fridge.
Sriracha mayo
Mix in a little sriracha sauce at a time into the mayonnaise until you get the heat you want.
Fry the Oumph! balls in oil, pour over the BBQ sauce and cook together until the balls are cooked through.
Cut the baguettes in half and slice lengthways then warm in the oven. Spread the baguettes with sriracha mayo, add the pickled vegetables and garnish with chilli and coriander.

For lunch today I made some buttery rice, with green beans and Oumph! sticky ribs. In my eyes You can’t go wrong with Oumph!, these “ribs” in particular are probably my favourite. They are also very tasty in sandwiches.
