Oumph! Caesar Salad

Ingredients:
280g Oumph! Thyme & Garlic
2 heads of romaine lettuce
A few cherry tomatoes
Cooking oil
Dressing:
50ml unsweetened soy milk
2 tsp Dijon mustard
1–2 cloves of garlic
1 tbsp hemp seeds or nutritional yeast
200-300ml oil (of your choice)
2 tbsp capers
1 tbsp lemon juice
Salt and pepper
Accompaniments:
Croutons (home- or ready-made) and vegan hard cheese, up to you!
Cooking Instructions:
Fry the Oumph! Thyme & Garlic in a hot pan with a little oil until browned and crispy.
Rinse and roughly chop the lettuce and slice the cherry tomatoes.
For the Dressing:
Pour all of your dressing ingredients, except the lemon juice and oil into a large container. Add about 100ml of oil to start.
Blend with a hand mixer, slowly adding oil and lemon juice as you go. Add more oil for a thicker dressing, add more lemon juice or water for a thinner one. Add more of any of the ingredients to taste; you decide how much garlic you want on your breath…
Toss the lettuce in the dressing and throw everything else on top. Keep a napkin handy…

For lunch today I made some buttery rice, with green beans and Oumph! sticky ribs. In my eyes You can’t go wrong with Oumph!, these “ribs” in particular are probably my favourite. They are also very tasty in sandwiches.
