Vegan Döner Fajitas

Ingredients:
1 pack (280g) Oumph! Döner Style Kebab
3 tbsp water
4 large tortillas
6-7 peppers and chillies (medium or hot), cut into chunks
200 g tender stem broccoli
3 tomatoes
1 onion
2 lemons, cut in half
Cooking oil, for frying
Fajita spice, to taste
Tomato sauce:
1 tin crushed tomatoes
1 clove of garlic, crushed
1 tsp chilli flakes
Salt, pepper and lemon, to taste
Cooking Instructions:
Tomato sauce: Mix all the ingredients. Taste it to check if you like an extra squeeze of lemon in the sauce.
Fry the veggies in oil on medium heat. Fry the lemon halves as well, cook side down (it releases the flavour).
Fry the Oumph! Döner Style Kebab (defrosted or straight from the freezer) in a hot frying pan – no oil needed, just add 3 tbsp of water and stir for 2-3 minutes until the water has evaporated.
Wrap the tortilla breads in tin foil and warm in the oven (160C) for a few minutes.
Now, for the final – and most important stage: chuck the Oumph! and veggies into the tortilla breads, top with tomato sauce and EAT!

For lunch today I made some buttery rice, with green beans and Oumph! sticky ribs. In my eyes You can’t go wrong with Oumph!, these “ribs” in particular are probably my favourite. They are also very tasty in sandwiches.
