Oumph! Pumpkin Soup

Ingredients:

280g Oumph! Thyme & Garlic
1 kg butternut squash, peeled, deseeded and chopped into chunks
1 cube of vegetable stock
4 cloves of garlic
1 brown onion
Salt and pepper
4 tbsp vegan crème fraiche
A handful of pumpkin seeds to serve
Olive oil

Cooking Instructions:

Fry the onion garlic and in olive oil. Add the butternut squash chunks and cover with water. Add the stock cube and a little salt and pepper.
Cook until the pumpkin is completely soft.
Blend until smooth, seasoning with extra salt and pepper to taste.
Toast the pumpkin seeds in a pan and fry the Oumph! Thyme & Garlic until browned and crispy.
Pour the soup into four bowls, top with the Oumph! and pumpkin seeds, drizzle on the crème fraiche and serve with bread.
