Oumph! Tikka Masala

Ingredients:
280g Oumph! The Chunk
1 brown onion
3 cloves of garlic
3 cm ginger
3 tbsp Garam Masala
2 tbsp tomato purée
½ red chilli
50g vegan butter
400g coconut cream
400g chopped tomatoes
1 stock cube
4 green cardamom pods
Juice of 1 lime
1 plum tomato
½ bell pepper
For serving
Basmati rice and fresh coriander.
Cooking Instructions:
Peel and chop the onion, garlic and ginger. Deseed and dice the chilli. Then sauté with the tomato purée and garam masala in the butter.
Add the coconut cream, chopped tomatoes and cardamom pods, lightly crushed. Bring to a boil and let it simmer for 10 minutes.
Season to taste with salt and the juice of 1 lime. Add the Oumph! and simmer for a further 7–10 minutes. Dice the tomato and pepper and add them to the pot for the last 2 minutes.
Serve over basmati rice, perhaps cooked with some crushed cardamom pods, and chopped coriander is the icing on the cake – namaste!

For lunch today I made some buttery rice, with green beans and Oumph! sticky ribs. In my eyes You can’t go wrong with Oumph!, these “ribs” in particular are probably my favourite. They are also very tasty in sandwiches.
