Oumph! Mac n Cheese Waffle Slider

Ingredients:
1 pack of Oumph! Pulled BBQ Chunks, defrosted
Vegan mayonnaise, to serve
Lettuce leaves, to serve
Waffle:
Non-stick spray, for waffle maker
1 tbsp vegetable stock powder
100g vegan cream cheese
1 tbsp tomato puree
100ml water
150g all-purpose flour
150g nutritional yeast
1 tbsp baking powder
1 tsp onion powder
1 tsp garlic powder
1 tsp sugar
1 tsp paprika
1 tsp turmeric powder
200g vegan cheese, grated
300g macaroni, cooked
Cooking Instructions:
Preheat waffle maker and spray with non-stick spray
To make the waffle, in a large mixing bowl whisk together the wet ingredients: water, cream cheese, and tomato puree
Then whisk in the dry ingredients: vegetable stock powder, flour, nutritional yeast, baking powder, onion powder, garlic powder, sugar, paprika, and turmeric powder
Finally, fold in the cheese and macaroni to complete the waffle batter
Add about 1/3 of the batter to the waffle iron at a time, cook until golden brown, about 5 minutes each. Carefully take out the waffle
Fry Oumph! Pulled BBQ Chunks on medium heat
Build sliders by topping waffles with Oumph! Pulled BBQ Chunks, a drizzle of mayonnaise, and lettuce leaves

For lunch today I made some buttery rice, with green beans and Oumph! sticky ribs. I’m my eyes You can’t go wrong with Oumph!, these “ribs” in particular are probably my favourite. They are also very tasty in sandwiches.
