Indian Oumph! stew

Ingredients:
1 pack Oumph! the Original Chunk or 2 packs Oumph! Tandoori
1 tbsp tandoori paste (if using chunk)
For the stew:
½ yellow onion, chopped
1 clove of chopped garlic
1 tbsp roughly chopped ginger
1 tin of coconut cream
½ squeezed lemon
1 tbsp tandoori paste
Rice
½ yellow onion, chopped
1 tsp chilli flakes
½ tsp cardamom
255g rice
100ml vegan yoghurt to reduce the heat
2 naan bread
Cooking Instructions:
Let's kick off with the rice. Fry the onion, chilli and cardamom in oil for a few minutes. Add the rice and fry for another minute. Then cook the rice according to the instructions on the packet.
Fry the onion, garlic, ginger and tandoori paste in a frying pan. Sauté for a few minutes.
Add the coconut cream and simmer for about 10 minutes.
Fry the Oumph! to the desired consistency. If using The Original Chunk, stir in ½ tbsp of tandoori paste.
Season the stew with salt and lemon. When you are satisfied with the flavour, pour the Oumph! chunk into the pot and stir.
Now it's time to slam your taste buds! Assemble your dish and dig in.

For lunch today I made some buttery rice, with green beans and Oumph! sticky ribs. In my eyes You can’t go wrong with Oumph!, these “ribs” in particular are probably my favourite. They are also very tasty in sandwiches.
