Oumph! Tex Mex Plate

Ingredients:

1 pack of Oumph! the Original Chunk
1 bag of taco seasoning
80g vegan cheese, grated
Guacamole:
2 avocados
1 lime
1 clove of chopped garlic
Salt and pepper
1 jalapeño
Pico de gallo:
2 tomatoes
1/3 red onion
2 tsp chopped jalapeño
4 tbsp lemon juice
Salt
Coriander
Olive oil
1 bag of taco chips

Cooking Instructions:

Pico de gallo:
Chop the tomato, red onion, chilli and coriander and add into a bowl with salt, lemon and olive oil. Mix well and then leave to one side.
Guacamole:
Core the avocados and roughly chop them. Chop the jalapeño and add them together with the finely chopped garlic, lemon and salt. Stir with a fork and season to taste.
Nacho plate:
Fry the Oumph! to the desired consistency, add the taco seasoning.
To assemble the dish together start by placing the taco chips in an oven-proof dish and then layer on the Oumph! and vegan cheese. Cook in the oven until the cheese has melted at 200 degrees. Remove from the oven and go bananas with Pico de gallo, guacamole and sliced jalapeño. Arriba.
