Oumph! Kebab Skewers with Chimichurri

Ingredients:
280g Oumph! The Spiced Kebab, defrosted
2 red onions, cut into wedges
8 cherry tomatoes, for the skewers
2 pieces of small tomatoes on the vine
1 lemon
8 + 8 tbsp chimichurri sauce
A handful of fresh coriander
Salt
2 tbsp olive oil
400ml basmati rice
20 g coconut flakes
1 lime, washed, zest grated and juiced
Chimichurri sauce
2 green chillies, e.g. jalapeño
fresh oregano
fresh parsley
1 lemon
100ml olive oil
½ tsp salt
2 cloves of garlic
Cooking Instructions:
Thread Oumph! The Spiced Kebab, onion and cherry tomatoes on skewers.
Grill the skewers, the tomato vines, and the lemon. Toast the coconut flakes.
Mix the lime zest and juice with the rice. Then top with toasted coconut flakes.
On a large serving plate, place the skewers, tomato vines and lemons, and spoon over chimichurri sauce. Garnish with coriander and oregano.
Serve with the rice and the rest of the chimichurri sauce.
Chimichurri sauce
Press the garlic in a blender.
Add the rest of the ingredients and mix until the sauce is almost smooth.
Taste and add more chilli to taste.

For lunch today I made some buttery rice, with green beans and Oumph! sticky ribs. In my eyes You can’t go wrong with Oumph!, these “ribs” in particular are probably my favourite. They are also very tasty in sandwiches.
